GRILLING RECIPES
Avocado Salsa
- 4 ears corn roasted
- 6 avocados diced
- 1 red bell pepper diced
- 2 jalapenos diced
- 1/2 red onion diced
- 2 lemons juiced
- 1tbsp olive oil
- 1tbsp salt
- 1 bunch cilantro chopped
Roast corn on hot grill and cut off cob. Mix with other ingredients.
Cucumber Jalapeno Margarita
In a shaker add-
- 2 slices of fresh jalapeno
- 1 slice of peeled cucumber
- splash of simple syrup
- 1 1/2 ounce tequila
- 1/2 ounce of Cointreau
- Margarita mix
Muddle jalapeno, cucumber and simple syrup. Add a scoop of ice.
Add tequila, Cointreau and margarita mix. Shake and pour in 12oz glass.
Jicama and Watermelon Salad
- 2 jicama, julienne
- 2 cups seedless watermelon, medium dice
- 1 red onion, julienne
- 3 limes, juiced
- oil to coat salad
- salt and pepper to taste
Combine all ingredients, season to taste.
