Outstanding in the Field began the Hamptons leg of their travels in 2004, when they hosted a dinner at Quail Hill Farm in Amagansett. Denevan, who lives in Santa Cruz, Calif., was drawn to the area for its history of farming and fishing. He chose Satur Farms not only because it was owned by a chef—Müller is executive chef at Bayard's in Manhattan—but because the farm supplies produce to the area's best restaurants and is committed to farming by organic standards.
However, when Denevan initially approached Satur and Müller to host a dinner, the couple refused. "I said absolutely not," says Satur. "We were in season, and we were too busy." But Denevan explained that all they had to do was show up for dinner. "I said, 'So you do everything, and we get to have dinner?'" Satur recalls.
The chosen chef was Alejandro Alcocer of Brown on the Lower East Side, who joined a group of cooks in a makeshift kitchen. "We were looking for someone aligned with our philosophy," says Outstanding in the Field's COE (Chief Organizer of Everything) Katy Oursler, about how they chose Alcocer. "He runs a small neighborhood restaurant and he's community-oriented in that he uses local products."
The real stars of the night, however, were the vibrant baby beets, carrots and potatoes, all glistening with freshness. Then there were the tomatoes—in this case, heirloom varieties of Green Zebra, Purple Cherokee and Striped German.
